Tex-Mex Side Salad



A zesty Tex-Mex Side Salad featuring a blend of fresh vegetables, beans, cheese, and a tangy ranch dressing with a Tex-Mex twist. Perfect as a side dish for your Tex-Mex or Mexican-inspired meals.

Ingredients:

  • 2 cups mixed greens
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels canned or fresh
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup sliced black olives
  • 1/4 cup cilantro leaves, chopped
  • 1/4 cup tortilla strips or chips
  • 1/4 cup ranch dressing
  • 1 lime, juiced
  • 1 tsp Tex-Mex seasoning
  • Salt and pepper to taste

Instructions:

Put the mixed greens, corn, cherry tomatoes, red onion, cheddar cheese, black olives, and cilantro leaves in a large salad bowl

Mix the ranch dressing, lime juice, Tex-Mex seasoning, salt, and pepper in a small bowl using a whisk

Pour the dressing over the salad and toss it around to cover everything evenly

For extra crunch, sprinkle tortilla strips or chips on top of the salad

As soon as possible, serve as a cool Tex-Mex side salad
