Ingredients:
- 2 cups mixed greens
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels canned or fresh
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup shredded cheddar cheese
- 1/4 cup sliced black olives
- 1/4 cup cilantro leaves, chopped
- 1/4 cup tortilla strips or chips
- 1/4 cup ranch dressing
- 1 lime, juiced
- 1 tsp Tex-Mex seasoning
- Salt and pepper to taste
Instructions:
Put the mixed greens, corn, cherry tomatoes, red onion, cheddar cheese, black olives, and cilantro leaves in a large salad bowl
Mix the ranch dressing, lime juice, Tex-Mex seasoning, salt, and pepper in a small bowl using a whisk
Pour the dressing over the salad and toss it around to cover everything evenly
