A creamy and dairy-free twist on the classic carbonara recipe, using sweet potatoes to create a rich and flavorful sauce.
Ingredients:
- 200g rice noodles
- 2 sweet potatoes, peeled and cubed
- 1 cup coconut milk
- 1/2 cup nutritional yeast
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions:
Follow the directions on the package to cook the rice noodles
After draining, set aside
Steam sweet potatoes in a pot until they are soft
Steamed sweet potatoes, coconut milk, smoked paprika, nutritional yeast, garlic, and salt and pepper should all be combined in a blender
Blend until creamy and smooth
Warm up some olive oil in a pan over medium heat
Stirring constantly, cook the sweet potato sauce for two to three minutes after adding it
Cooked rice noodles should be added to the pan and thoroughly mixed with the sauce
Garnish with chopped parsley and serve hot
