Ingredients:
- 1 cup cooked quinoa
- 1/2 cup almond flour
- 1/4 cup chia seeds
- 1/4 cup almond butter
- 1/4 cup coconut oil, melted
- 1/4 cup unsweetened shredded coconut
- 1/4 cup sugar-free maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup sugar-free chocolate chips optional
Instructions:
Preheat oven to 350F 175C and line a baking dish with parchment paper
In a large bowl, combine cooked quinoa, almond flour, chia seeds, almond butter, melted coconut oil, shredded coconut, sugar-free maple syrup, vanilla extract, and salt
Mix well until fully combined
Fold in sugar-free chocolate chips if using
Transfer the mixture to the prepared baking dish and press it down firmly and evenly
Bake for 20-25 minutes, or until the edges are golden brown
Remove from the oven and let it cool completely in the baking dish
Once cooled, lift the parchment paper to remove the bars from the dish and cut into desired sizes
Store in an airtight container in the refrigerator for up to a week
