Avocado Cilantro Cream Soup



A tasty soup made with ripe avocados and fresh cilantro that is great for people on the keto diet. The flavors are bright and it's full of healthy fats.

Ingredients:

  • 2 ripe avocados
  • 1/2 cup fresh cilantro leaves
  • 2 cloves garlic, minced
  • 1/4 cup lime juice
  • 2 cups chicken or vegetable broth
  • 1/2 cup heavy cream or coconut cream
  • Salt and pepper to taste
  • Optional toppings: sliced avocado, chopped cilantro, lime wedges

Instructions:

In a blender, combine avocados, cilantro, garlic, lime juice, and broth

Blend until smooth

Transfer mixture to a saucepan and heat over medium-low heat

Stir in heavy cream and season with salt and pepper

Cook for 5-7 minutes, stirring occasionally, until heated through

Serve hot, garnished with optional toppings if desired
