Chicken Zucchini Pesto Salad



Grilled chicken, fresh zucchini, cherry tomatoes, and a flavorful pesto dressing make up this tasty and healthy chicken zucchini pesto salad. This salad is great for summer because it's filling and cool.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 medium zucchinis, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup pine nuts, toasted
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup fresh basil leaves
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons pesto sauce
  • 2 tablespoons balsamic vinegar
  • Salt and black pepper to taste

Instructions:

Preheat grill to medium-high heat

Season the chicken breasts with salt and pepper

Grill the chicken for about 6-8 minutes per side or until cooked through

Let it rest for 5 minutes, then slice it into thin strips

In a large bowl, combine the sliced zucchinis, cherry tomatoes, red onion, and toasted pine nuts

In a small bowl, whisk together the olive oil, pesto sauce, and balsamic vinegar to make the dressing

Season with salt and black pepper

Add the sliced chicken and grated Parmesan cheese to the salad bowl

Drizzle the dressing over the salad and toss gently to coat all ingredients

Garnish the salad with fresh basil leaves
