Ingredients:
- 2 boneless, skinless chicken breasts
- 2 medium zucchinis, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup pine nuts, toasted
- 1/4 cup Parmesan cheese, grated
- 1/4 cup fresh basil leaves
- 1/4 cup extra-virgin olive oil
- 2 tablespoons pesto sauce
- 2 tablespoons balsamic vinegar
- Salt and black pepper to taste
Instructions:
Preheat grill to medium-high heat
Season the chicken breasts with salt and pepper
Grill the chicken for about 6-8 minutes per side or until cooked through
Let it rest for 5 minutes, then slice it into thin strips
In a large bowl, combine the sliced zucchinis, cherry tomatoes, red onion, and toasted pine nuts
